Natural heart health care
If you have ever foraged your own food, then you know just how satisfying it can be. Using it to make this warm gooey, blackberry peach cobbler takes the "feel good" feeling to a whole new level. Blackberries are a powerful source of nutrients. They are a great source of anthocyanins, an antioxidant (and reason for the dark purple color) that supports heart health. That paired with high levels of Vitamin C and potassium make the berries a no brainer for cardiovascular health. The fact that blackberry bushes grow ramped in the US, and are even often considered a weed, is yet another reminder that food is medicine, and eating local regional foods is best.
Pairing the blackberries with fresh peaches from the farmers market takes this traditional desert to the next level. I also added extra cinnamon and brown sugar on top for good measure. Enjoy!
Ingredients
FILING:
7 ripe peaches
2 cups blackberries (or one container)
1 tbsp lemon juice (Meyer lemon preferred)
Zest of one lemon
1 cup sugar (or monk fruit sweetener)
1/4 cup flour
1 tsp cinnamon
1 tbsp vanilla extract
Spray avocado oil
TOPING:
1 1/2 cup of flour
2 tbsp sugar
1/4 teaspoon salt
2 tsp baking powder
6 tbsp vegan butter
3/4 cup almond milk
1 tsp cinnamon (garnish on top)
1 tsp brown sugar (garnish on top)
Preparation
1. Slice peaches into wedges. Add all filling ingredients to a bowl and stir until fully combined.
2. Line baking sheet with avocado oil to prevent sticking and add in the filling.
3. Separately, combine flour, sugar, salt, and baking powder. Once mixed, add vegan butter and break apart with hands or pastry cutter until it turns into small crumbs.
4. Add in the almond milk and stir until combined.
5. Scoop the topping mixture onto the filling in small clumps (have fun with this!).
6. Garnish with a sprinkle of cinnamon and brown sugar (measure with the heart).
7. Bake at 375 for 30-45 minutes depending on oven.
8. The filling should be bubbling and the toping golden brown. Enjoy!
