Blueberry Compote Overnight Oats

A breakfast good for the brain

If you have a big test or important meeting in the morning, these overnight oats are what you should be making the night before. Blueberries are great for brain health and function. Studies have show that blueberries can significantly increase brain activity, blood flow, and support memory function. Not only that, they are rich in antioxidants and have been shown to promote brain health such as lowering risk of dementia, reducing effects of Alzheimer's, preventing age-related memory loss, increasing brain cells, concentration, and focus. How amazing is that! The next time you are prepping for a big day, remember this easy overnight oat recipe that will leave you full and satisfied until after you aced your exam or meeting.

Almond Carrot Top Pesto

Ingredients

1 1/2 cup of blueberries
1/2 cup of water
2 tbsp sugar
Juice of half an orange
Zest of half an orange
2 cups rolled oats
2 cups of almond milk
2 tbsp maple syrup
2 tsp vanilla extract
2 tsp cinnamon

Garnish:
Half a banana
1 tsp cinnamon
1 tbsp maple syrup

Preparation

1. Add blueberries, water, sugar, orange juice, and zest to a pan. Cook on medium until it starts to thicken, roughly 7 minutes. Set aside to cool.
2. Add half the oats, almond milk, maple syrup, vanilla, and cinnamon to glass jar. Pour half the blueberry compote mixture into jar.
3. Repeat step 2 with remaining ingredients (steps are repeated for easier mixing). Shake until combined.
4. Place in fridge over night. The next morning top jar with banana, cinnamon, and maple syrup. Enjoy!
