Ingredients

1 butternut squash
3-3 1/2 cups of flour
1 head of garlic
1 tbsp olive oil
A handful of sage
6 tbsp Parmesan cheese (or vegan alternative) for garnish (optional)
Salt and pepper to taste
Red pepper flakes for garnish (optional)

Preparation

1. Preheat the oven to 400�F. Cut the butternut squash in half, remove the seeds, score the flesh, and place it on a lined baking sheet. Cut the top off the garlic head, drizzle with olive oil, and sprinkle with salt. Roast in the oven for 45 minutes or until the squash is fork-tender.
2. Scoop out the cooked squash into a bowl, discarding the skin. Mash the squash until it forms a smooth pur�e.
3. Gradually add flour to the squash pur�e, mixing until it forms a dough. Knead the dough on a floured surface until it's no longer sticky.
4. Roll the dough into a long, thin shape, then cut it into small squares. Roll each square over the back of a fork to create lines.
5. Bring a pot of salted water to a boil. Cook the gnocchi in batches until they rise to the surface, then remove with a slotted spoon and set aside.
6. In a separate pan, melt butter until it begins to brown. Add sage leaves and cook until they crisp up. Add the cooked gnocchi to the pan along with a few tablespoons of pasta water.
7. Saut� the gnocchi until they turn crispy and golden brown, about 3-4 minutes.
8. Plate the gnocchi and garnish with grated Parmesan cheese and red pepper flakes, if desired.
