The best use of leftover cabbage
Transform leftover cabbage into a delicious and healthy meal with this favorite dish of mine! The combination of kimchi, BBQ sauce, and a touch of vegenaise creates an explosion of flavors in every bite. Pro tip: if you don't have oat flour, simply blend some oats to make your own. This cabbage pancake not only satisfies your taste buds but also helps reduce food waste in your kitchen.
Ingredients
1 cup oat flour
1 cup water
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/4 head green cabbage
1/4 head purple cabbage
1 carrot
2 green onions
1/4 cup kimchi
1 tbsp veganaize
1 tbsp bbq sauce
1/2 tsp sesame seeds for garnish
Preparation
1. Add flour, water, and seasonings to a bowl. Mix until combined.
2. Shred cabbage, carrots, and finely chop green onion. Then add to bowl and mix until fully covered.
3. Lightly spray pan with oil and then add cabbage mixture. Press down until it is fully flat and touching as much surface as it can.
4. Once the bottom begins to brown, 3-4 minutes, flip pancake over. It is easier to place on plate and then flip plate into skillet.
5. After the pancake cooks on both sides, place on plate and garnish with chopped kimchi, veganaize, and bbq sauce.
6. Finish with a sprinkle of sesame seeds.
