Carrot Fries

Move over potatoes

Who said potatoes are the only vegetable that is allowed to call itself a fry? Carrots are a very close second contender and provide different health benefits. I am typically not a huge carrot person but I swear I could eat these fries every single day. They are a little sweet like sweet potato fries and with a similar color, they are a great dupe. These are the best snack, side dish, BBQ addition, breakfast, literally whatever you want because they are healthy and delicious!

Almond Carrot Top Pesto

Ingredients

1 bag of carrots
1 tbsp olive oil
1 tsp onion powder
1 tsp garlic powder
1 tsp paprika
1 tsp Italian seasoning
1 tsp pepper
1 tsp salt
Garnish with parsley

Preparation

1. Dice carrots into even lengths and thickness.
2. Mix carrots in olive oil and spices in a bowl until evenly coated.
3. Air fry at 400 degrees for 10 minutes flipping halfway through.
Sauce: veganize, siracha, and minced garlic
