No such thing as too much carrot… or is there?
It’s finally time to give carrots there moment to shine. This carrot ginger soup is the perfect start to any meal or can even act as a hearty entree. What makes this recipe even better is the health benefits of this root vegetables. Filled with fiber, potassium and antioxidants, carrots are a weight loss friendly food and have been linked to lower cholesterol levels and improve heart health. They are also great for your eyes and vision, but be careful because too many of them could turn your skin orange (seriously, it’s a thing!).
Ingredients
5 carrots
1 minced white onion
5 cloves of garlic
1 knob of turmeric
1 knob of ginger
4 cups of vegetable stock
2 tbsp olive oil
1 tsp garlic powder
1 tsp pepper
1 tsp salt
Garnish:
Shaved carrots
Microgreens
Preparation
1. Finely chop carrots, mince garlic, and dice onions.
2. Add olive oil to a pot and then add onion, cooking until translucent.
3. Add garlic and carrots and cook until softened. Then add vegetable stock.
4. Mince turmeric and ginger directly into soup. Then add seasoning.
5. Cook on medium for 20 minutes.
6. Once fully combined use immersion blender and blend until smooth.
7. Garnish with shredded carrot and microgreens.
