Almond Carrot Top Pesto

Ingredients

2 cups cooked corn (fresh or frozen)
1 can black beans, rinsed and dried
1/2 can hearts of palm chopped
2 small cucumbers
10 cherry tomatoes, diced
1 avocado cubed
1/2 - 1 diced jalapeño (depending on spice preference)
1 tbsp cilantro, finely chopped
Juice of 1 lime
1 tsp dijon
1 tbsp olive oil
Salt and pepper to taste

Preparation

1. Add corn, rinsed beans, hearts of palm, cucumbers, tomatoes, avocado, jalapeo, and cilantro to a bowl.
2. Separately mix the lime juice, Dijon, olive oil, and salt and pepper in a small bowl.
3. Use a whisk to mix dressing well.
4. Pour dressing over salad and mix.
