I had a version of these in Punta Mita and I knew I had to recreate them at home with my own spin! Elevating the essence of edamame, this recipe showcases the power of marinades and sauces, transforming a humble ingredient into a delightful indulgence. By harmonizing crisp textures from apples and radishes with the creamy richness of avocado, this dish redefines the ordinary and delivers a taste of tropical innovation. Packed with protein-rich edamame and healthy fats from avocado, complemented by a medley of fresh greens and veggies, this dish offers a balance of taste and nutrition. This is a delicious way to get in extra greens and veggies while enjoying every bite.

Almond Carrot Top Pesto

Ingredients

1 cup cooked and shelled edamame
1 tbsp soy sauce
1/2 tbsp rice vinegar
1 tsp chili oil (adjust to taste)
1/4 sliced apple
3 sliced radishes
1 green onion
Half an avocado
Butter lettuce (2 pieces per lettuce cup)
2 tbsp vegan mayonnaise
1/2 tbsp sriracha (adjust to taste)

Preparation

1. Cook the edamame as per instructions. Combine soy sauce, rice vinegar, and chili oil in a closed container. Add cooked edamame, shake until evenly coated, and set aside.
3. Thinly slice the apple and radish using a mandolin. Cut them into small slivers. Finely slice the green onion. Slice the avocado evenly.
4. In a separate bowl, mix vegan mayonnaise and sriracha to create the sauce.
5. Assemble lettuce cups by placing two pieces of lettuce in each cup.
6. Add marinated edamame, apple, radish, green onion, and avocado into the lettuce cups.
7. Drizzle with the prepared sauce.
8. Serve and relish the vibrant flavors and varied textures of these Edamame Lettuce Cups!
