An easy meal prep recipe

Traditionally, falafel is made with dried chickpeas soaked for at least 8 hours, but for those with a busy schedule, canned chickpeas work just as well. The key to a delicious falafel is the use of fresh herbs and a generous amount of spices that infuse the dish with bold and authentic flavors.

Another bonus of making falafel at home is the opportunity to make it healthier without sacrificing texture and crunch. Using an air fryer instead of a traditional deep fryer significantly reduces the amount of oil needed, making it a healthier alternative to traditional frying methods.

Almond Carrot Top Pesto

Ingredients

1 can chickpeas rinsed and dried

Preparation

1. Add all ingredients to a blender, blend until ingredients are combined (but not fully smooth).
2. Place in a bowl and cover, put in fridge for 20 minutes to set.
3. Scoop out balls with ice cream scooper.
4. Air fry at 400 degrees for 12- 15 minutes or until golden brown.
