This is the perfect spring salad! When I’m having dinner guests I whip up this delicious simple and easy salad and it’s always a favorite. The crispy apples paired with the crunchy fennel and acidic lemon make this the perfect combination.

Not to mention, fennel is a packed with nutrients, including iron, vitamin A, vitamin C, and calcium. It is a powerful vegetable with healing benefits. To name a few: it has health-protective nutrients, easing symptoms of crams, aiding digestion, healing skin, aiding in weight management, and preventing chronic disease.

Almond Carrot Top Pesto

Ingredients

1 shaved fennel bulb
Fennel tops minced
1 shaved apple
1/2 cup green olives
2 tbsp shaved parmesan
Juice of half a lemon
1 tbsp olive oil
1 tsp salt
1 tsp pepper

Preparation

1. Shave the fennel bulb and chop the fennel tops.
2. Shave the apple and parmesan into the salad.
3. Slice olives in half and squeeze the lemon overtop.
4. Add the olive oil and season with salt and pepper.
5. Mix salad until combined and enjoy!
