This tastes like home in a cup
There are a few recipes that just taste like home and my mom's granola is one of them. The best part of this granola is it is made with real, whole ingredients and filled with protein, healthy fats, and fiber. The brown sugar and maple syrup make it a sweet treat, but the salt takes it over the tab, balancing the flavors to perfection. I love topping this over coconut yoghurt or simply having a bowl with a little almond milk. It is the perfect taste of home in a cup.
Ingredients
3 cups of oats
1 cup crushed almonds
1 cup crushed walnuts
1 cup pumpkin seeds
1 cup coconut shreds
1 cup maple syrup
1/2 cup brown sugar
1/2 cup extra virgin olive oil
1 tsp salt
Preparation
1. Add all ingredients to a bowl and mix until fully combined. (Make sure there are no brown sugar clumps).
2. Add to a lined baking tray and bake at 300 degrees for 45 minutes to an hour. Stir every 15 minutes to ensure even baking.
3. Once out of the oven top with an extra pinch of sea salt and enjoy!
