We love leftover herbs
Whenever I have leftover herbs in my fridge (which is often), I like to throw together this quick and easy vegan green goddess dressing before they go bad. The best part is you can mix and match whatever herbs you have: basil, parsley, cilantro, dill, chives, or mint? Perfect! And the best part? Herbs are loaded with great antioxidants, antibacterial properties, folic acid and improve digestion. The next time you have leftover herbs from a special homecooked meal, remember to use them to make this fresh, bright vegan green goddess dressing that the whole family will love.
Pro Tip: Store herbs in a glass of water in the fridge and they can last 2+ weeks!
Ingredients
1/2 cup of soaked raw cashews
1/2 cup of water (as desired consistency)
A handful of fresh parley (roughly 1/4 cup)
A handful of fresh cilantro (roughly 1/4 cup)
A handful of fresh chives (roughly 15 sprigs)
Juice of 1 lime
1/2 tbsp of raw honey (or agave alternative)
1 tsp of salt (to taste)
1 tsp of pepper (to taste)
Optional: add 1 tbsp of olive oil or 2 cloves of garlic to add earthier or more tangy flavor
Preparation
1. Soak cashews in hot water for 15-20 minutes, then drain.
2. Add cashews, water, lime juice, and raw honey (or agave) to a blender, blending until smooth. Then add herb ingredients of parsley, cilantro, and chives, and season with salt and pepper to taste.
3. Adjust taste to preference, adding more salt or pepper, lime juice, or herbs as desired.
4. Use on any salad or as a veggie dip, enjoy!
