Hearts of palm, a sustainable and cruelty-free ingredient, are the star of this recipe. They offer a satisfying texture while being low in calories and packed with nutrients like fiber, potassium, and vitamins B6 and C. With this recipe it is all about the seasoning and Cajun couldn't be more perfect!
Ingredients
1 can hearts of palm (yields about 2 servings)
1 cup all-purpose flour
1 tsp baking soda
3 tbsp Cajun seasoning
1 tsp salt
1 tbsp Italian seasoning
1 cup oil (avocado oil preferred)
Preparation
1. Drain the hearts of palm and pat them dry with paper towels. Using a fork, puncture holes in the hearts of palm, then gently smash them to create a stringy texture.
2. On a plate, combine the flour, baking soda, Cajun seasoning, salt, and Italian seasoning. Mix well until the seasonings are evenly distributed.
3. In a pot, heat the oil over medium-high heat. To test if the oil is hot enough, flick a drop of water into the pot; if it sizzles, the oil is ready.
4. Coat each hearts of palm piece thoroughly with the flour mixture, pressing down to ensure even coating. If needed, dip them again in the mixture for a second coat to achieve a more robust coating.
5. Carefully place the coated hearts of palm in the hot oil, frying them until both sides turn golden brown and crispy, usually taking about 3-4 minutes per side.
6. Once done, remove the hearts of palm "fish" sticks from the oil and place them on paper towels to drain excess oil.
7. Garnish the sticks with flaky sea salt and serve with your favorite vegan tartar sauce alongside a refreshing squeeze of lemon.
