Italian Penicillin soup

Boost your immunity with my flavorful take on a classic Italian soup! My immunity soup is a pasta-based dish inspired by the traditional "Italian Penicillin" or "pastina soup". Packed with anti-bacterial onions, healing herbs, and everything you need to feel better, this soup is the perfect remedy for when you're feeling under the weather. Forget about chicken noodle soup and try this recipe the next time you need a boost of health and comfort.

Almond Carrot Top Pesto

Ingredients

4 sticks of celery
3 large carrots
5 cloves of garlic
1 white onion (medium)
2 tbsp vegan butter
6 cups of vegetable stock
2 sprigs of Rosemary
5 sprigs of thyme
1 bay leaf
Parmesan rind (optional)
3 cups acini di pepe pasta
1/2 bunch of curly kale
Juice if half a lemon
1/2 cup of parmesan cheese (can be vegan)
1 tsp salt
1 tsp pepper

Garnish
Parmasean
Red pepper flakes

Preparation

1. Add vegan butter to a pan. Once hot and minced garlic and diced onion.
2. When translucent (roughly 2 minutes), add celery and carrots. Cook until they begin to become tender (roughly 5 minutes).
3. Then add vegetable stock. Top with fresh herbs and parmesan rind and simmer for 10 minutes.
4. Then remove herbs and rind and add pasta and chopped kale.
5. Stir in chopped kale so it begins to cook. Then sprinkle lemon juice, parmesan, salt and pepper. Stir until fully combined. Enjoy!
