A New Take On Eggplant

Transforming eggplant into a delectable delight is as easy as scoring and saut�ing it in a luscious Japanese BBQ sauce. This method infuses the eggplant with a succulent, melt-in-your-mouth quality that perfectly complements a bed of rice. Almond Carrot Top Pesto

Ingredients

1 eggplant
2 tbsp olive oil
1/4 cup Japanese BBQ sauce
1 tsp everything but the bagel seasoning
1 pinch of red pepper flakes to taste
2 sprigs of parsley for garnish
1 cup wild rice (optional)

Preparation

1. Cut the eggplant lengthwise and score it deeply. The smaller the scoring, the better the absorption of flavors.
2. Heat olive oil in a pan. Once hot, add the scored eggplant and cook for a few minutes on each side. Then place the eggplant scored side down until it starts to char.
3. Pour Japanese BBQ sauce over the eggplant and continue cooking on low heat, ensuring the eggplant is thoroughly coated with the sauce.
4. Once the eggplant is softened and infused with the flavors, transfer it to a plate over wild rice.
5. Sprinkle with everything but the bagel seasoning, red pepper flakes, and fresh parsley for a delightful finish. Enjoy this flavorful dish!
