Don't miss your family traditions
Football has traditions and one of my family favorites has always been a big sheet pan of nachos right in time for kickoff. When going plant based, a big fear can be losing traditions but this recipe will remind you that many of your family favorites can be made vegan!
The 2020 Superbowl had 100 million American's watching the game and a YouGov study found that 29% of watchers would serve or eat nachos (behind pizza 35%, chicken wings 36%, and chips and dip 40%). But how much food are we really talking? Over 88 million pounds of cheese, 8.2 million tortilla chips, and 8 million pounds of guacamole were consumed on Superbowl Sunday. That's a lot of cheese!
Instead of adding to the various animal and health concerns of the meat and dairy industry, try this delicious vegan version of homemade gameday nachos!
Ingredients
Beans:
1 tbsp olive oil
1 can of pinto beans
3 cloves of garlic
1/2 a white onion
1/2 packet of taco seasoning
1 tsp salt
3/4 cup of water
Nachos:
Tortilla chips to preference
2 cups vegan cheese (can choose pre shredded or block)
1 Jalapeno (Pickled if you prefer less spice)
2 large tomatoes
1/2 a white onion
Tofutti (vegan sour cream), slightly watered down
Guacamole (2 avocado's, 1/2 white onion, 1 tsp garlic powder,
1 tsp salt, 1 tsp pepper, juice of half a lime)
Cilantro to garnish
Preparation
Beans:
1. Sauté minced garlic and diced onions in olive oil until translucent. Season with taco seasoning and salt.
2. Add in drained beans and water, stirring to combine. Put lid on and cook on medium for 5-7 minutes.
3. Reduce heat to low and cook uncovered until water is dissolved.
4. Use a fork to smash beans until desired consistency.
Nachos:
1. Dice tomatoes and onions. Slice jalapeno into small slices.
2. Lay tortilla chips on a lined baking tray. Add vegan cheese, jalapenos, and beans.
2. Melt cheese in oven on 400 degrees for 10-12 minutes.
3. Add tomatoes, onions, Tofutti sour cream (add a little water to make a smoother consistency), guacamole, and cilantro on top.
