Napa cabbage doesn't get enough credit

American cuisine doesn’t give cabbage the credit it deserves! This fusion side dish is a little unexpected and will leave your dinner guests with an unexpected salty crunch. Napa cabbage is nutrient dense. Not only is it a great source of vitamin C, it also contains high levels of B vitamins, Vitamin K, calcium, copper, iron, and manganese. This quick and simple recipe will satisfy your taste buds while providing your body with the nutrients it needs. It’s a win win, and actually quiet delicious if I say so myself!

Almond Carrot Top Pesto

Ingredients

2 tbsp miso paste
1 tbsp rice vinegar
1 tsp sesame oil
2 tbsp soy sauce
1 knob of ginger grated
1 clove of garlic grated
1 tsp brown sugar
1 head of Napa cabbage

Garnish:
1 tsp sesame seeds
1 sliced green onion

Preparation

1. Add miso paste, vinegar, sesame oil, soy sauce, and brown sugar.
2. Grate ginger and garlic directly into the sauce. Mix until fully combined.
3. Chop cabbage into 4 parts. Glaze sheet with olive oil spray and lay evenly on lined baking dish.
4. Coat cabbage with sauce and bake at 390 degrees for 10 minutes.
5. Garnish with sesame seeds and green onion.
