When we think of a traditional charcuterie boards the go to is sliced cuts of deli meat and artisanal cheeses, which doesn't lend favorable to your vegan guests. I always recommend adding a bunch of chopped fruit and veggies, but if you're sick of the typical hummus spreads, try this easy tapenade instead. This salty snack is rich in antioxidants and vitamins such as Vitamin E, copper, and Iron. There is a reason why leading experts recommend the Mediterranean diet, olives included! This spread is made in minutes and can stay fresh in the fridge for 2-3 weeks, making it the perfect mid day snack.

Almond Carrot Top Pesto

Ingredients

10 garlic stuffed green olives
15 kalamata olives
1 1/2 tbsp capers
2 tbsp finely chopped parsley
1/2 tsp red pepper
1 1/2 tbsp olive oil

Preparation

1. Finely chop all ingredients. Add them to a bowl and mix until evenly combined.
2. Enjoy on bread, crackers, or sliced veggies.
