Ingredients
Pasta of choice
1 cup frozen peas
2 cups arugula spinach mix
1/2 cup basil
2 cloves garlic
Juice of half a lemon
1 tbsp nutritional yeast
1/4 cup pasta water (as desired for consistency)
A pinch of salt
Olive oil for garnish
Parmesan for garnish (or vegan alternative)
Preparation
1. In a pot of boiling water, blanch the peas for one minute. Remove and immediately transfer them to a bowl of ice water to halt the cooking process. Repeat the blanching process with the arugula-spinach mix.
2. In a separate pot, cook the pasta according to package instructions. Reserve a cup of pasta water and set it aside.
