Ingredients
1 block extra firm tofu, drained and cubed
3 tablespoons avocado oil
3 tablespoons peanut butter
2/3 cup coconut milk
3 tablespoons soy sauce
1 tablespoon sriracha (adjust to taste)
1 tablespoon sesame oil
1 clove garlic, grated
1 knob ginger, grated (about 1 teaspoon)
1 tablespoon maple syrup
Juice of 1/2 a lime
2 green onions, thinly sliced for garnish
1 teaspoon sesame seeds for garnish
1 container butterhead lettuce, leaves separated, washed, and dried
2 scallions, thinly sliced on the bias
Additional 1/2 cup crushed peanuts (for topping)
Preparation
1. Heat 2 tbsp avocado oil in a large skillet over medium-high heat. Add the cubed tofu and cook until golden brown and crispy on all sides, about 7–10 minutes. Remove from heat, place on paper towel, and set aside.
2. In a small bowl, whisk together peanut butter, coconut milk, soy sauce, sriracha, sesame oil, grated garlic, grated ginger, maple syrup, and lime juice until smooth and creamy.
3. Return the skillet to medium heat and add the cooked tofu. Pour the peanut sauce over the tofu (saving some for topping), stirring to coat evenly. Cook for 2–3 minutes until the sauce thickens and adheres to the tofu. Remove from heat.
4. Place a few butterhead lettuce leaves on a serving platter. Spoon the peanut tofu mixture into the center of each leaf.
5. Sprinkle each lettuce cup with thinly sliced green onions, crushed peanuts, sesame seeds, and a drizzle of extra sauce.
