Last minute Christmas cookies
Indulge in a festive treat this holiday season with these last-minute peppermint brownie cookies! Dipped in creamy white chocolate and topped with crushed candy canes, these cookies not only look stunning but also taste divine. Serve with a cold glass of almond milk for the ultimate treat.
Ingredients
1 tbsp ground flax meal
3 tbsp water
¾ cup flour
⅓ cup cocoa powder
1 tsp baking powder
½ tsp baking soda
5 tbsp melted vegan butter
⅛ tsp salt
⅓ cup organic brown sugar packed
⅓ cup organic cane sugar
2 tbsp almond milk
2 tsp vanilla extract
1 cup vegan white chocolate chips
1 tsp coconut oil
Crushed candy canes
Preparation
1. Stir flax meal and water in a small bowl, then set aside for 5 minutes or until gel like texture is formed
2. Mix butter, brown and white sugar, baking powder, vanilla, and flax egg into a bowl.
3. Once mixed add cacao, flour and salt. Then add milk. Mix until fully combined.
4. Spoon dough onto a lined baking sheet and cook at 350°F for 10-12 minutes, then let cool.
5. Melt coconut oil and chocolate in microwave or on stove. Dip cookie in chocolate, then sprinkle with crushed candy cane. Put in freezer for 5 minutes to harden, then enjoy.
