This is an allium veggie packed soup! Allium plants include leeks, garlic, onions, shallots, and chives. Not only do they have antioxidant, antiviral, and antibacterial properties, but these plants have a ton of other benefits.

Leeks are one of the most underrated super foods! This potato leek soup is a great way to add them into your diet if you are a first time tryer. Leeks improve digestion, reduce inflammation, fight heart disease, and even combat cancer. They are a nutrient dense vegetable with minimal calories but are high in water content and fiber which promotes weight loss. They even lower blood sugar levels, protect our brain, and fight off infections. I guess the question is more what can't leeks do...

Almond Carrot Top Pesto

Ingredients

1 large leek
2 russet potatoes
1 white onion
1 shallot
4 chives
4 cloves of garlic
2 tbsp olive oil
2 tbsp butter
1 cup of unsweetened almond milk (or dairy alternative)
1 bay leaf
1 tsp salt (to taste)
1 tsp pepper (to taste)
Handful of croutons

Preparation

1. Slice leek in half and then chop finely. Dice potatoes and white onion. Slice shallots and mince garlic.
2. Heat olive oil and butter in pan. Add garlic, onions, and leaks until starting to become translucent, roughly 5 minutes.
3. Then add potatoes and bay leaf. Season with salt and pepper.
4. Pour in the vegetable stock until everything is covered.
5. Bring to boil, then turn heat to medium and cover for 15 minutes. The potatoes should be easily pierced with a fork.
6. Meanwhile, place shallots in oiled pan and cook until crispy.
7. Ladell soup into a blender or use hand blender until smooth. Option only blend half for a chunkier soup.
8. Pour back into pot once blended. Stir in almond milk until warmed.
9. Top soup with olive oil, croutons, fried shallots, and chives. Enjoy!
