An easy vegan dupe
One of the biggest misconceptions to plant-based/vegan eating is that you have to give up the things you love, but that just isn’t the case. Growing up, pulled pork sandwiches were one of my favorites, but this dupe is pretty darn close. Plus it can be made in minutes right on the stove. Serve this with your favorite toppings (I chose the tartness of pickles and spice of pepperoncini's for some heat). It is a spot on vegan version of a BBQ classic, and it might just be better! Whether you care about the animal, planet, or your own health, try this vegan dish and celebrate that you’ve made a better decision.
Ingredients
2 bunches oyster mushrooms shredded
1 tsp garlic powder
1 tsp chopped onions
1 tsp paprika
1/2 tsp chipotle chili
1 tsp salt
1 tsp pepper
2 tbsp avocado oil
3 tbsp barbecue sauce
2 slices of toasted buttered bread
2 small pickles
1 tbsp pepperoncini's
Preparation
1. Shred oyster mushrooms, pulling apart vertically to get stringy texture.
2. Season with seasonings and mix until fully coated.
3. Add oil to a pan, once hot, add the mushrooms cooking on medium for roughly 5 minutes or until tender.
4. Add BBQ sauce and stir until fully coated.
5. Layer sandwich with mushrooms, pickles, and banana peppers. Enjoy!
