Ingredients
Base:
1 cup of mixed walnuts and pecans
1 cup dates
2 tbsp olive oil
1 tsp vanilla
1 tsp pumpkin spice
1/4 tsp cinnamon
1/4 tsp cardamom
1-2 tbsp water
Top:
1/2 cup soaked cashews
1/3 cup almond milk
3 tbsp pumpkin purée
2 tbsp olive oil
3 tbsp maple syrup
2 tsp pumpkin spice
1 tsp vanilla
1/4 tsp cinnamon
1/4 tsp cardamom
Garnish:
Sprinkle with pumpkin spice, cinnamon, and cardamom
Vegan chocolate chips
1 tsp coconut oil
Preparation
1. Add base ingredients to a blender and blend until smooth. Add water a little at a time as needed.
2. Soak cashews in hot water for 20 minutes. Add remaining ingredients and blend until smooth.
3. Line a container with parchment paper. Add base and use a utensil to create a flat layer. Place in freezer while making the filling.
4. Once filling is blended, pour on top of base layer.
5. Sprinkle spices on top for garnish.
6. Place in freezer and freeze until hard.
7. Once frozen, melt chocolate chips with coconut oil until it creates a drizzle.
8. Drizzle chocolate overtop bars and enjoy.
