Almond Carrot Top Pesto

Ingredients

For Pancakes:
1 cup almond milk
1 tsp apple cider vinegar
� cup pumpkin puree
1 tbsp melted vegan butter
1 tsp vanilla extract
1 � cups all-purpose flour
2 tbsp brown sugar
1 � tsp pumpkin spice
1 � tsp baking powder
� tsp baking soda
1 tbsp maple syrup
Pinch of salt

For Pumpkin Spice Butter:
4 tbsp butter
� tbsp maple syrup
� tsp pumpkin spice

Preparation

1. In a bowl, combine almond milk and apple cider vinegar, setting it aside for 5 minutes to create "buttermilk".
2. In a separate large bowl, whisk together the "buttermilk", pumpkin puree, melted vegan butter, and vanilla until well mixed.
3. Add the dry ingredients - flour, brown sugar, pumpkin spice, baking powder, baking soda, and salt - to the wet mixture. Whisk until fully combined.
4. Stir in the maple syrup until the pancake batter is thoroughly mixed.
5. Heat butter in a pan and pour spoonfuls of pancake batter once hot. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
6. In another bowl, soften the butter in the microwave for 15 seconds. Whisk it, then add maple syrup and pumpkin spice. Whip until fluffy and combined.
7. Serve the pancakes topped with pumpkin spice butter and a generous drizzle of maple syrup. Indulge and relish every delightful bite!
