1 cup almond milk
1 tbsp apple cider vinegar (to make "buttermilk")
3 tbsp olive oil
1/2 cup pumpkin puree
1 cup sugar (or monk fruit sweetener)
3 tbsp brown sugar
1 tsp vanilla extract
1 cup all-purpose flour
1 tsp pumpkin pie spice
1/2 tsp baking powder
1/2 tsp baking soda
1/4 teaspoon salt
1/4 cup (or more as desired) vegan chocolate chips
Preparation
1. In a bowl, combine almond milk and apple cider vinegar. Mix until it starts to froth, then set aside for five minutes to create "buttermilk".
2. Add the "buttermilk" mixture, olive oil, pumpkin puree, sugar, and vanilla extract to a bowl. Stir until fully combined.
3. Gradually add the dry ingredients - flour, pumpkin pie spice, baking powder, baking soda, and salt - to the wet mixture, stirring until just combined. Avoid overmixing.
4. Place cupcake liners in a muffin tin and spoon the muffin mixture into each cup, leaving a little space for the muffins to rise. The batter should yield around 6 muffins.
5. Bake at 350°F for approximately 20 minutes or until a toothpick inserted in the center comes out clean.
