Easy chia jam
Lavender lemon raspberry jam is my new obsession. Adding chia seeds makes sure this is loaded with fiber, antioxidants, and protein while giving it the perfect texture. The homemade lavender simple syrup provides a gentle touch to this beautiful spread with a floral aromatic spin. Plus lavender is naturally calming and a great way to kick off the morning.
P.S. I used white sugar but trying this next time with coconut sugar for an easy healthy swap!
Ingredients
Simple Syrup:
1 cup water
1 cup sugar
1/2 cup lavender
Juice of half a lemon
Jam:
1 package of raspberries
1 cup of simple syrup (made above)
2 tbsp chia seeds
Juice of half a lemon
Zest of half a lemon
Preparation
1. Add water, sugar, and lavender to a pot. Bring to boil and turn off heat until sugar is fully dissolved.
2. Add juice of half a lemon and then strain to remove lavender.
3. Add raspberries, simple syrup, and juice of half a lemon to a pan. Then zest half a lemon.
4. Add chia seeds and mix until fully combined.
5. Transfer to a jar and let cool.
