Ingredients
3 cups chopped rhubarb
1/4 cup water
1/4 cup maple syrup
2 tbsp chia seeds
Juice of half a lemon
1 cup coconut yogurt
1/2 cup blueberries
Preparation
1. In a saucepan, combine chopped rhubarb and water. Cutting with scissors makes it easier to handle.
2. Once the rhubarb begins to soften, add maple syrup. Use a potato masher to break down the rhubarb further as it cooks.
3. Once the mixture reaches a jam-like consistency, add chia seeds and fresh lemon juice. Stir well and transfer the rhubarb jam to a mason jar. Allow it to cool and refrigerate overnight for optimal flavor and texture.
4. In a glass or jar, create layers of the parfait. Begin with a layer of the rhubarb jam, followed by coconut yogurt, and a handful of blueberries. Repeat this layering process two more times or until the container is filled.
