A new invention that you'll love, I give you… salad toast
Sometimes I am craving salad, and other times I want a heartier toast. And then there are occasions, more often than not, that I want both salad and toast, thus my creation of salad toast. It works best when you use veggies that are going bad, stack on extra greens (micro greens recommend), and add your favorite dressing. It’s a great way to get in a hearty meal, packed with nutrients, with the flavors you love. This is my rendition, but feel free to mix and match based on what you'd got in your fridge!
Ingredients
1 slice of toast
Hummus
1/2 avocado
1 bunch of arugula
1 bunch of micro greens
Lemon Dijon vinaigrette (1/2 lemon juice, 1 tsp Dijon, 2 tbsp olive oil, salt and pepper)
Crumbled goat cheese
1 basil leaf
2 slices of tomatoes
Pesto (1 bunch of basil, 2 tbsp olive oil, 1 tsp parmesan blended)
Preparation
1. Toast bread and then assemble. Start with hummus and avocado, then add arugula and micro greens.
2. Separately, create the vinaigrette by combining the lemon juice, Dijon, olive oil, salt, and pepper.
3. Top with goat cheese (optional), basil leaf, and tomatoes.
4. Drizzle with pesto (blended basil, olive oil, and parmesan). Enjoy!
