Chickpeas and cannellini beans come together to create a satisfying and nutritious base, complemented by the aromatic blend of marjoram, garlic, and red pepper flakes. The addition of vegan feta not only adds a creamy touch but also introduces a burst of savory richness. Marjoram, known for its aromatic and slightly sweet flavor, enhances the overall profile of this dish. This is a dish you'll be eating by the spoonful!
Ingredients
1/4 cup olive oil
1 medium white onion
1 shallot
4 cloves of garlic, minced
1 can chickpeas
1 can cannellini beans
4 sprigs marjoram
1/2 tsp red pepper flakes
Salt and pepper to taste
2 tbsp vegan feta (or regular)
Garnish with marjoram, red pepper flakes, and feta
Preparation
1. Add olive oil to a pan. Once hot, add finely chopped shallot and onion, cooking until translucent, roughly 2-3 minutes.
2. Add rinsed beans and chopped garlic, stirring gently. Then add finely chopped marjoram, red pepper flakes, salt, and pepper.
3. Cook the beans until they begin to crisp, roughly 10 minutes. Refrain from mixing too much, but flip to crisp on all sides.
4. Garnish with marjoram leaves, red pepper flakes, and vegan feta.
Cooking Note:
Ensure not to over mix the beans to allow them to crisp up on all sides.
