Potatoes are part of history
Every Saint Patty's day this is my favorite green and potatoes dish that I make as an ode to the holiday. To get into a little potato history… in the 19th century Ireland suffered from the Great Famine or the Irish Potato Famine. Over a million people in Ireland died between 1845 - 1857 due to potato crop rot, causing the population to drop by nearly 25%. Nowadays we avoid potatoes because of diet culture labeling them high carb” and “bad”, but the truth is they have been an integral part of many cultures for centuries.
When you prepare them with real olive oil, flaky sea salt, and a fresh herbed chimichurri sauce, they make a satisfying healthy dish! Don't be afraid to enjoy your potatoes!
Ingredients
1 bag of fingerling potatoes
Sauce:
1 Fresno chili (without seeds)
1 shallot
3 cloves of garlic
1/2 cup olive oil
1/4 cup of red wine vinegar
1 bunch parsley
1 bunch cilantro
2 tbsp oregano
1 tsp salt
Preparation
1. Blend the chili, shallot, garlic, olive oil, and red wine vinegar in a blender on low.
2. Then add the fresh herbs and salt and pulse gently.
3. Salt water and boil potatoes until fork tender, roughly 15 - 20 minutes.
4. Transfer to a lined pan and smash down with glass. Then drizzle with olive oil and salt.
5. Bake at 390°F for 40 - 45 minutes or until crispy.
6. Dip in sauce and enjoy!
