Ingredients
24 dates (non pitted)
1/8 cup peanut butter
1/8 cup peanuts
1/2 cup vegan chocolate chips
1 tbsp coconut oil
Pinch of salt
Preparation
1. Cut dates in half long ways on one side, keeping the back of the date in tack. Remove the pit.
2. Spoon a small amount of peanut butter onto the date and add a few peanuts. Press the date together to close, whipping off excess peanut butter.
3. Melt chocolate with coconut oil and dip each date in the chocolate.
4. Tip: use two toothpicks to keep the date closed while dipping.
5. Top with a pinch of sea salt, then freeze.
