Where are my pickle people at?
These 5 minute spicy pickles are one of my go to snacks. Although they are not fermented (and therefore not providing additional probiotics like fermented pickles do), they still support digestion and are delicious. Pickles are high in water content which will leave you fuller longer, and the vinegar in pickles slows the rate our digestive system absorbs carbohydrates. This helps reduce insulin spikes and keeps energy level stable. And the best part? They can be made right at home in just 5 minutes. The next time you are craving a spicy, sour snack, try this pickle recipe!
Ingredients
1 cup of warm water
1 cup rice vinegar
1/4 cup of sugar
1 tbsp salt
2 cucumbers
1 tbsp dried red chili flakes (adjust based on spice preference)
Preparation
1. Chop cucumbers into the shape of your choice: spears, circles, crinkled.
2. Add cucumbers to a sealable jar, then pour water, vinegar, sugar, salt, and chili flakes overtop.
3. Shake jar until combined.
4. Leave in fridge 2-14 days before opening. Enjoy!
