Ingredients
2 cored apples
1/4 cup oats
2 tbsp vegan butter, melted
1 tbsp cinnamon
1/2 tsp nutmeg
2 tbsp brown sugar
Pinch of salt
1 1/2 tbsp maple syrup
Preparation
1. Remove the top of the apple and core it using an ice cream scoop, leaving the bottom intact.
2. In a bowl, combine oats, melted butter, cinnamon, nutmeg, a pinch of salt, brown sugar, and 1 tablespoon of maple syrup. Stir until thoroughly combined.
3. Stuff the cored apples with the oat mixture.
4. Bake at 350°F for 30 minutes or until the apples are tender.
5. Drizzle with additional maple syrup before serving.
