Ingredients
1 container sungold tomatoes (8 oz)
1/2 lb orecchiette pasta
1 bundle fresh oregano
1 shallot, minced
4 cloves garlic, sliced
2 tbsp olive oil
2 tbsp vegan butter
1/4-1/2 cup pasta water
Parmesan cheese, for garnish (roughly 1/4 cup)
Red pepper flakes, to taste (roughly 1 tsp)
Salt, to taste
Preparation
1. Begin by dicing the onion, chopping garlic, and halving the tomatoes.
2. Heat a medium pan. Once hot, add the olive oil and vegan butter. Saut� the shallot and garlic until translucent. Add the tomatoes and oregano, and cook until tender for about 5 minutes.
3. Meanwhile, in a separate pan, cook the orecchiette according to package instructions. Reserve a portion of the pasta water.
4. Remove the oregano from the sauce and add the pasta water, cooking until fully incorporated. Set aside a few whole tomatoes.
5. Blend the sauce in a blender, then return it to the pan. Drain the cooked pasta and add it to the sauce, mixing until thoroughly combined.
