Almond Carrot Top Pesto

Ingredients

1 sweet potato
3/4 cup chopped pecans
2 tbsp vegan butter
2 tsp cinnamon
2 1/2 tbsp maple syrup
A sprinkle of nutmeg
Pinch of salt
Olive oil spray (to line the baking sheet)
1 tbsp additional vegan butter
Drizzle of maple syrup (for topping)

Preparation

1. Cut the sweet potatoes into circles. Line a baking sheet with olive oil spray and place the sweet potato rounds, ensuring they don’t overlap.
2. Melt 1 tbsp of butter and brush it over the sweet potatoes.
3. Bake in the oven at 375°F for 15 minutes. Remove and flip over the sweet potato rounds.
4. In a bowl, mix chopped pecans, butter, cinnamon, maple syrup, nutmeg, and salt until fully combined.
5. Spoon a generous portion of the pecan mixture onto each flipped sweet potato round.
6. Return to the oven and bake for an additional 10-15 minutes until the bites begin to turn golden.
7. Drizzle the bites with additional maple syrup for added sweetness. Serve and savor the deliciousness!
