Quick and Elegant Sweet Potato Delight

Ingredients
1 large sweet potato (or two medium)
5 tbsp vegan butter
4 cloves of garlic, minced
1 1/2 tbsp rosemary, minced
1/2 cup Parmesan cheese (can be vegan)
Salt and pepper to taste
Preparation
1. Using a mandolin, finely slice the sweet potatoes, removing both ends.
2. In a large bowl, combine the sweet potato slices with melted butter, minced garlic, minced rosemary, and Parmesan cheese. Season with salt and pepper.
3. Use tongs to mix the ingredients until thoroughly combined, then layer the mixture into a muffin tin. Cover with foil.
4. Bake at 350 degrees for 35 minutes. Remove the foil and continue baking until the top begins to brown, about another 15 minutes.
5. Use a knife or spoon to carefully scoop out the sweet potato stacks. Serve and savor these delightful creations!
