Scrambled Egg Alternative: Tofu Magic

Tofu Scramble on toast offers a flavorful alternative to scrambled eggs. Packed with veggies, spices, and the goodness of tofu, this breakfast dish is not only delicious but also a fantastic source of plant-based protein and nutrients.

This recipe introduces tofu as an egg substitute, providing an excellent source of protein. The nutritional yeast adds a savory, cheesy taste while offering a boost of essential B vitamins. The turmeric is a powerful anti-inflammatory. Combine this with the goodness of vegetables for a fulfilling morning meal!

Almond Carrot Top Pesto

Ingredients

2 tbsp olive oil
1/2 white onion
2 minced garlic cloves
1 bell pepper
1/2 block of firm tofu
1/2 jalape�o (seeds removed)
1/4 cup almond milk
2 tsp turmeric
1 tsp paprika
1 tsp garlic powder
1 tsp salt
1 tbsp nutritional yeast
2 pieces of toast
1/2 an avocado
2 sprigs of cilantro
Flaky sea salt

Preparation

1. Press and drain excess moisture from the tofu.
2. Heat olive oil in a pan. Add diced onion, bell pepper, and minced garlic. Cook until the vegetables soften.
3. Crumble the tofu into the pan, maintaining small chunks to resemble the texture of scrambled eggs.
4. Add turmeric, paprika, garlic powder, salt, jalape�o, and almond milk to the pan. 5. Cook until the almond milk reduces slightly. Stir in the nutritional yeast until fully incorporated.
6. Serve the flavorful tofu scramble over toasted bread. Top it with sliced avocado, fresh cilantro, and a sprinkle of flaky sea salt for an extra burst of flavor.
