Tomato Jam

A new spin on boring toast

I am all about having meals on toast and I swear this one tastes like Christmas morning. The tomato jam paired with balsamic glaze and fresh herbs is so incredibly savory, but adding crispy shallots on top takes it to a whole other level. Instead of the same boring avocado toast, try to switch up your morning routine with someone more interesting and decedent. It can still be made in minutes, and yes dirties a few pans, but boy is it delicious. Once you start making this, you won't be able to stop!

Almond Carrot Top Pesto

Ingredients

1 container of tomatoes
2 cloves of garlic
1 tsp rosemary
1 tsp oregano
2 tbsp. Olive oil
1/2 tbsp balsamic glaze
2 tbsp avocado oil
1 shallot

Preparation

1. Add olive oil to a pan. Once hot add garlic and tomatoes. Cook until they begin to break down.
2. Then add finely chopped rosemary and oregano.
3. Add a little additional olive oil if needed and add balsamic glaze. Mix until fully combined.
4. Separately, add avocado oil to a pan. Once hot add finely sliced shallots.
5. Cook on medium until shallots become crispy.
5. Toast bread and layer on the tomato jam, then top with crispy shallots and enjoy!
