Almond Carrot Top Pesto

Ingredients

1 purple radish
2 red radish
1 watermelon radish
2 cooked medium beets
1 red bell pepper (heart cutout optional)
1/2 grapefruit peeled
2 sprigs of mint
1 tbsp Dijon mustard
1/4 cup olive oil
Juice of half a lemon
1/2 tsp salt
1/2 tsp pepper

Preparation

1. Use a mandolin to finely slice radish. Then cut beats to size and use a heart cut out (optional) to cut the bell pepper.
2. Peal skin off grapefruit and slice mint into ribbons.
3. Assemble on plate.
4. Separately in a bowl mix olive oil, Dijon, lemon juice, salt, and pepper.
5. Sprinkle mint on salad and top with dressing.
