A sweet treat with hidden veggies
What do you do when your friend drops off two huge zucchini's from her garden? You make vegan zucchini brownies of course!
You will never win the argument with me that eating vegetables is boring. There are so many ways to incorporate them into everyday cooking and even hiding them from your kids who may not yet be a fan. These brownies are vegan, loaded with antioxidants, and support digestion and heart health. Plus they are to die for!! Perfect for a school lunch or late night snack to eat your greens while enjoying something you love.
Ingredients
2 cups of shredded zucchini
2 cups flour
1 1/2 cup sugar
1/2 cup avocado oil
1/4 cup of cacao powder
1/2 tbsp vanilla
1 1/2 tsp baking soda
1 tsp salt
1 1/2 cup chocolate chips (or more)
1 chocolate bar (on top)
Preparation
1. Combine flour, sugar, and oil. Use hand mixer and mix until clumps are gone.
2. Add in the zucchini, cacao, vanilla, baking soda, and salt. Mix until fully combined.
3. Add in the chocolate chips.
4. Chop chocolate bar and sprinkle on top.
5. Bake at 350 degrees for 30-40 minutes.
6. Note: use 10 x 10 or 11 x 7 baking dish (dish used is 8x8 and they are too thick)
7. A toothpick should go through the brownies with no residue.
8. Let cool and cut with plastic knife. Sprinkle flaky sea salt on top.
