Almond Carrot Top Pesto

Ingredients

1 large zucchini
3 cloves garlic
1 tbsp cooking olive oil
4 green onions
8 basil leaves
1/4 cup parsley
Juice of half a lemon
1 tsp salt
1 tsp pepper
1 tbsp finishing olive oil

Preparation

1. Finely chop garlic and add it to a heated pan with oil. Then add sliced zucchini, cooking until soft, roughly 3 to 4 minutes. Set aside to cool.
2. Finely chop green onion, basil, and parsley, then add to a bowl.
3. Add the cooked zucchini to the herb mixture. Top it with lemon juice, salt, pepper, and olive oil. Mix until combined.
4. Use this medley as a topping for pasta, rice, quinoa, chips, or enjoy it as a standalone delight!
